VEGAN EGGPLANT PARM

Ingredients (All Organic)

  • 1 large eggplant 
  • Tsp of spicy marinara sauce on every eggplant slice 
  • Tsp of Daiya cheese on every eggplant slice 

Process 

  1. Preheat oven to 400 degrees 
  2. Cut eggplant in ½ inch slices 
  3. Cook for 5 minutes on each side, for a total of 10 minutes 
  4. Take the eggplant out of the oven and add a tsp of marinara sauce and tsp of vegan cheese to each slice 
  5. Put eggplant back in oven for 2 minutes, or until the cheese melts
