ZUCCHINI NOODLES WITH TOASTED PINE NUTS

To all my peeps out there who are afraid of pasta- this is a great alternative that gives you a similar feel to pasta (but let's be real this doesn't taste anything like pasta/ preferably brown rice pasta). This meal is delicious, especially if you're someone who tries to avoid high carb meals. As an option- you can add a tomato sauce to this. I like it really plain and find it still has a lot of taste. 

Ingredients (All Organic)

  • 2 medium sized zucchini 
  • 4 tbsp pine nuts 
  • ½ garlic clove minced 
  • 2 tbsp olive oil 
  • 1 dash cayenne pepper 
  • Sea salt to taste 

Process 

  1. Spiralize zucchini (Click Here) for spiralizer
  2. Add olive oil and garlic clove to a large saucepan with low heat for 2 minutes
  3. In a separate small saucepan, heat pine nuts on low heat for 4 minutes 
  4. Add zucchini noodles to large saucepan 
  5. Add sea salt to taste with a dash of cayenne pepper 
  6. Add toasted pine nuts to top of dish
