LOADED VEGGIE ROMAINE WRAPS

This super simple and delicious recipe is inspired by the avocado lettuce cups at Jean-Georges' abcV. 

Ingredients (All Organic)

  • 3 Large romaine lettuce leaves (to use the wraps)
  • 1/2 cup chopped Cauliflower 
  • 1/2 cup sliced Mushrooms 
  • 1/8 cup chopped Onions 
  • 1/8 cup chopped Peppers 
  • 1/8 cup chopped Celery 
  • 1 cup chopped Kale 
  • 1/2 Avocado sliced
  • Tsp Sesame oil 
  • Tsp Nutritional yeast
  • Pinch of Sea salt

Process

  1. Saute (Click Here) for pan onions first in a medium sized pan for 2 minutes until they start to brown. Then add the cauliflower, mushrooms, peppers, celery and kale in sesame oil.
  2. Place cooked ingredients in romaine lettuce cups
  3. Add sliced avocado on top of veggies
  4. Sprinkle nutritional yeast 
  5. Add sea salt to taste
